Roasted Peach Frozen Kefir with Toasted Pecans

Ok, people, you know I love kefir. I use it in everything including soup, pancakes (and more pancakes), muffins, creme fraiche and, of course, smoothies. Kefir is not only great for you, but it's delicious and versatile. I think about the only use for kefir I haven't blogged about is dessert. Cafe Terra to the rescue! My buddy Terra is such a creative foodie and this frozen kefir recipe is a perfect example. Tart, creamy kefir + sweet peaches + crunchy pecans + a touch of rum = a whole lot of YUM.

I am so excited to be sharing a fun, healthy recipe here today!  When I was trying to decide what to make, I decided to try something new.  Have you ever had Kefir, pronounced  "Keh-FEER?"  Here is a guest post I had on my site from the lovely Leslie Goldman, a women's health writer and body image expert.  Leslie shares all about what Kefir is, and how wonderful it is for our body.

Here is an easy frozen kefir recipe, with a bit of rum to make it just that much better!  You will need an ice cream maker to complete the recipe.  If you don't have an ice cream maker, you may be able to just freeze and stir frequently.

Roasted Peach Frozen Kefir with Toasted Pecans 
Recipe from Terra Baltosiewich
  • 32 oz bottle of plain Kefir
  • 6 oz container of Chobani Peach Greek Yogurt
  • 3/4 cup sugar
  • 1/2 cup spiced rum
  • 1 cup roasted peaches, diced
  • 1/3 cup pecans, toasted and chopped
  • 1 tsp cinnamon
Directions
Preheat oven to 350 degrees Fahrenheit.  Slice one peach in half, remove pit, cover with small amount of honey, and place on sheet pan, bake for about 30 minutes depending on oven.  When roasted, dice peach and set aside.

Toast pecans whole in a sauce pan on medium heat, toss to toast both sides, only toast them for about 3-5 minutes.  You will start to smell that they are toasted, they have a beautiful aroma.  Chop toasted pecans finely, and set aside.

In air-tight bowl, mix together Kefir, peach Greek yogurt, peaches, sugar, rum, toasted pecans, and cinnamon, and mix well.  Place in refrigerator to chill mixture for about two hours or overnight.

Place ingredients in ice cream machine, follow your instructions for your ice cream maker.  BUT only churn the yogurt for about 7-10 minutes.  If you churn for 20-30 minutes, it will definitely over churn the mixture, and then when it freezes it will just crumble, because it is too frozen. Place churned kefir in air-tight container in the freezer, and let freeze for up to 6 hours or overnight. Enjoy!
